Northern Sausages – Another northern food that everyone seems to well known if you buy in market about 350-400baht but if you make yourself about 100-150baht only . Then I tell how to make homemade Northern Sausages. Just eat with hot sticky rice for delicious.
Ingredient
1. Red pork meat with pork fat (roughly chopped) 1/2 kg.
2. Streaky pork (roughly chopped – not use skin) 250 grams
3. 3 Tbsp. Dark soy sauce
4. 3 Tbsp. Soy sauce
5. 1 Tbsp. Fish sauce
6. 3 Tbsp. Kaffir lime leaves (sliced)
7. Water 1/4 cup
8. Pork Filling (bitter taste) 300 grams
Spices
9. 6 Large dried chilies (Washed – remove seed – cut – soak in water)
10. Shallot (sliced) 1/2 cup
11. Garlic (chopped) 1/4 cup
12. Galangal (chopped) 1 Tbsp.
13. Lemon grass (sliced) 1/4 cup
14. Kaffir lime skin (shredded) 1 Tbsp.
15. Salt 2 Tsp.
16. Shrimp Paste 2 Tsp.
17. Root celery (chopped) 1 Tbsp.
18. Cone for pouring, rope and toothpick
how to cook
1. Filling cleaning – cleaning all fat out. Turn to another side and bring inside out and clean. Use a spoon to scrape the mucus out. Mix with salt quickly, wash with water. Mix with flour, clean with water. Turn to another side and clean outside again.
2. Spices – pound all spice finely.
3. Put pork, streaky pork, black soy sauce, soy sauce, fish sauce, spices, Kaffir lime leaves, water and mix to combine. Then taste it.
4. Cut pork gut cut in 15 – 20 inches. Tie with rope at the end of one side. And put in the cone on another side. Gradually put the mixed pork ingredients. Squeeze down to the end. Put not overfull because it will split out. Tie it tightly. Use the toothpick pushes the air out.
5. Put in the oven at 180C oven for 30 minutes. Remove out and let it cool.
6. Grill on a grill pan or brazier until crispy.
7. Served with ginger, chili and cauliflower.
