After a few vegetarian and vegan recipes here´s one special meal with meat. But not only meat. No. This curry comes with super delicious pork fillet pieces. Like all of my currys this one is super easy to prepare and you create a special meal for your friends or family in a short time.

Servings: 4


Ingredients:
  • 600 g pork fillet, cut in 1 cm pieces
  • 3 tbs red curry paste
  • 2 tbs neutral oil
  • 1 onion, cut in rings
  • 4 tsp chopped ginger
  • 500 g sweet potato, cut in 2 cm dice
  •  400 ml coconut milk
  • 200 ml veggie stock
  • 4 kaffir lime leaves
  • 1 stalk lemongrass
  • 1 tbs fish sauce
  • Fresh basil and coriander leaves for serving
