A chef's atlas

Another delicious recipe that I must share is a real Thai favourite- pad Thai. For anyone that doesn’t like spice this is the one dish you are sure to enjoy.

Ingredients for 1 person
Rice noodles, soaked until soft about 80g
Grated carrot about 1/4
Bean sprouts, handful
Tofu, diced about 50g, chicken, prawn can also be used
Shallot, about 1/2
1 Egg
2 tbsp crushed and roasted peanuts
80ml tamarind water
1 tsp palm sugar
1 tbsp chives, chopped
Pinch chilli powder (optional)
2 tsp light soy sauce
1 tsp oyster sauce
1/2tsp black soy sauce


In a bowl mix together both soy sauce, oyster sauce, sugar, tamarind water, 1tbsp peanuts and set aside


In a wok add a dash of oil along with the shallots, pinch salt and tofu and cook until golden
